Tulumbas
Ingredients:
- 3 verres d'eau
- 2 verres à thé de farine
- 1/2 verre à thé de semoule fine
- 1/2 verre à thé de sucre en poudre
- 1 oeuf
- 2 jaunes d'oeufs
- 1 cuillère à soupe de beurre
- 1 pincée de sel
- Miel
- Huile pour la friture
Preparation:
- Mélanger dans une casserole l'eau, le sel, le sucre et le beurre.
- Mettre la casserole sur feu moyen jusqu'à ce que le beurre soit fondu.
- Une fois le beurre est fondu, retirer la casserole du feu, ajouter la farine et le semoule tamisés en une seule fois, mélanger rapidement et énergiquement à l'aide d'une cuillère en bois pour
empêcher que la pâte forme des grumeaux.
- Remettre la casserole sur le feu et remuer jusqu’à ce que la pâte devienne légèrement épaisse.
- Retirer la casserole du feu et laisser la pâte tiédir. , incorporer immédiatement l'œuf entier en remuant énergiquement jusqu'à ce qu'il soit parfaitement intégré à la pâte, incorporer les 2
jaune d'oeufs, bien remuer, laisser reposer pendant 25 minutes.
- Faire chauffer l'huile dans une poêle profond, y déposer à l'aide de deux cuillères des petits boules de pâte et laisser dorer de toutes les faces, retirer-les avec une écumoire et les plonger
quelques minutes dans le miel.
- Disposer-les sur un plat de service.

viande Ingredients:300 g de kichk (délicieux yaourt, fermenté, séché puis réduit
en poudre)
300 g de viande dépourvue de gras
75 g de beurre oriental
30 g d’ail épluché
700 g d’eau bouillante
20 g de sel
Preparation:
Coupez la viande en morceau, faites-la revenir dans une marmite, retirez-la du feu, et disposez-la dans une casserole. Ajoutez-y un peu d’eau et de sel et faites-la
bouillir jusqu’à cuisson dans la marmite qui a servi à la viande. Mettez l’ail et l’eau sur le feu fort puis ajoutez hors du feu le kechk, le reste du set et gardez sur feu moyen tout en remuant
jusqu’à ébullition. A ce moment, ajoutez la viande et l’ail. Laissez sur feu moyen jusqu’au moment de servir. Il faut que le kechk reste sur le feu pendant 30 minutes.

Kaaks, petits gateaux secs libanais
Ingredients:
250 g de farine
10 cl d’huile
60 g de beurre
1 cuillere à café de levure chimique
1 cuillere à café de mahleb
6 cuilleres à soupe de sucre
2 cuilleres à soupe de graine de sesame
2 jaunes d’œufs
Sel
Preparation:
Mélangez dans un saladier la farine, la levure, le mahleb, le sel et le sucre et les grains de sesame.
Ajoutez 10 cl d’eau, puis l’huile et enfin le beurre fondu. Integrez chacun de ces ingredients à la pâte en la pétrissant à la main.
La pâte doit etre tendre. Laissez reposer 1 h
Prechauffez le four à 180 °
Confectionnez les biscuits en forme de croissant fermé : separez la pâte en petites boulettes, roulez les à la main sur un plan de travail fariné, pour leur donner une forme allongée
Puis collez les deux extremités de la pâte pour former un petit gateau rond et creux
Badigeonnez le dessus des biscuits avec du jaune d’œuf à l’aide d’un pinceau et mettez les au four 15 mn, le temps qu’ils dorent.
Information produit libanais : Le mahleb (mahlab ou mahlep) est une poudre de noyaux de cerises, qui pafume certains pains, des patisseries et parfois des mélanges d'epices.
